Thuy is the Founder and CEO of Thuy Vu Consulting, a consulting firm committed to training and educating industry and government agencies on food safety and life safety concerns of marijuana and industrial hemp consumer product manufacturing, in efforts to promote public health and public safety.
Thuy also serves as the Compliance and Safety Officer for Hammer Enterprises Integrated Systems, one of the largest vertically integrated industrial hemp companies in Colorado. Hammer Enterprises is a custom white label manufacturer offering full-spectrum hemp oil, CBD isolate, concentrates, vapes, tinctures, soft gels, topicals, and gummies. Hammer Enterprises is committed to strict quality control guidelines, ethical standards, and high integrity to deliver pesticide-free, chemical-free, and preservative-free products.
Thuy earned her Bachelor of Science Degree in Microbiology from the University of Rochester in Rochester, NY and maintains certifications as a Preventative Controls Qualified Individual (Food Safety Preventative Controls Alliance), National Restaurant Association ServSafe Food Protection Manager, ServSafe Instructor, ServSafe Proctor and 3M Certified Respirator Fit Tester. In her career, she worked as the lead foodborne illness, outbreak, and marijuana investigator for the City and County of Denver, Department of Public Health and Environment, Public Health Inspections Division from 2010-2015. Following Colorado’s legalization of medical marijuana in 2010, Thuy spearheaded public health inspections, investigations, and enforcement of the burgeoning marijuana industry, which helped to set precedent for the application of food safety regulations in the extraction and manufacturing processes of marijuana concentrates and marijuana-infused products. Thuy is responsible for issuing the first five food safety recalls of marijuana-infused products and leading the first foodborne illness outbreak investigation of a licensed marijuana operation in the nation. In the fall of 2014, Thuy conducted joint inspections with the Denver Fire Marijuana Team and emphasized the food safety risks of applying Eagle 20 on marijuana plants, also known as myclobutanil. As an Environmental Public Health Investigator, Thuy built on her previous work with the Denver Fire Marijuana Team and promoted interagency collaboration by working with the Denver Fire Department, Denver Public Health, Denver Police Department Vice and Drug Bureau, and the Colorado Department of Revenue Marijuana Enforcement Division, becoming the first marijuana specialist in the nation through this coordination and investigation work.
Thuy went on to work in the private marijuana and industrial hemp industries, overseeing the product research and development of marijuana concentrates and infused edibles for Leafs By Snoop, the first commercial celebrity cannabis product line. In October 2017, Thuy successfully petitioned for rezoning approval of the first industrial hemp extraction operation in Colorado.
Additionally, Thuy consulted with the Denver Fire Marijuana Team, resulting in the hazardous location classification requirements for Class I Division I and Class I Division 2 Extraction Rooms in the City and County of Denver in 2015, establishing the precedent for the rest of the nation.
Currently, Thuy works closely with the Colorado Department of Public Health and Environment, Division of Environmental Health and Sustainability following the announcement of their new Industrial Hemp Policy in July of 2017, in addition to the Colorado Air Pollution Control Division concerning VOCs released during primary and secondary cannabis extraction processes. Thuy serves on the Technical Committee for Denver’s Cannabis Sustainability Workgroup, assisting in the drafting of the Air Quality Chapter for the Cannabis Environmental Best Management Practices Guidance Document. Thuy specializes in:

Thuy sits on the cannabis planning committees and has presented at the Rocky Mountain Food Safety Conference (RMFSC), Association of Food and Drug Officials (AFDO), and Western Association of Food and Drug Officials (WAFDO). She has presented on marijuana and industrial hemp at numerous regional and national food safety conferences (AFDO, WAFDO, AFDOSS, RMFSC), the American Chemical Society (ACS), the Colorado Chapter of the International Code Council (ICC), the Rocky Mountain Chapter of the Society of Fire Protection Engineers (SFPE), and the American Veterinary Medical Association (AVMA). Thuy consults on cannabis extraction operations with the Denver Fire Department and the Oakland Fire Department and has also conducted marijuana training for the Alaska Division of Environmental Health Food Safety and Sanitation Program, the Hawaii Department of Health Sanitation, Food and Drug Branch, the Louisiana Department of Health and First Responder Training for the Sheridan Police Department in Colorado.
